Breakfast!

I think breakfast might be my favourite meal. Especially if I go out and have someone else make it for me.

It’s the thing I like most about staying in a hotel, particularly if there is a buffet!

The Saint is a fan of a full english, while I like pancakes.

Most days though, there isn’t enough time to whip up either of those, so I settle for muesli.

Finding a decent shop-bought muesli that isn’t laden with sugar or that doesn’t cost a fortune is difficult.

Don’t laugh, but I’ve started to make my own. I found a recipe in a Triathlon magazine, but have modified it a bit.

Feel free to take out or add in anything you like!

Ingredients

300g Rolled oats

150g raisins (cranberries are good too if you are flush with cash!)

240g pumpkin seeds

120g sunflower seeds

120g almonds (or hazelnuts)

20g shredded coconut

Simply combine the ingredients in a bowl. When completely mixed, transfer to an airtight container.

I never have any trouble with Boy Wonder and breakfast. Although he would love something sweet and chocolately, he is happy enough with porridge with dried fruits or weetbix with banana.

As a special treat I make his favourite, Granola. Again, it can be quite expensive to buy, but I found a recipe on Ben Davis’ inspiring blog, Ben Does Life.

I’ve changed Ben’s recipe slightly as BW prefers sultanas to raisins and none of us are cinnamon fans.

Ingredients

3 cups large rolled oats

1/2 cup of shredded coconut

1/2 cup chopped almonds

1/2 chopped walnut

1/2 cup liquid honey

1/3 cup crunchy peanut butter

1/2 cup sultanas

Heat the oven to 350F/180C/Gas 4

Mix oats, coconut, almonds, walnuts in a bowl

In another bowl mix the honey and peanut butter and microwave for a few seconds.

Combine the wet and dry ingredients together and spread out on a rectangular baking tray.

Bake in the oven for 5-6 minutes (keep an eye on it as the sultanas can burn quite easily). Stir/turn over the ingredients and then return to the oven for a further 5/6 minutes.

Leave to cool and then transfer to an airtight container.

The Saint likes his granola with milk, but Boy Wonder and I like it with thick yoghurt, so it often doubles as dessert!

  1. Ohhh ‘lightbulb moment’ so Granola is basically a toasted muesli .. LOL … all looks very yummo.. I’m a poached eggs girls but I rarely eat lunch so I need a decent kickstart…
